My most read subject in history as well as non-fiction in general has been about the early days of manned spaceflight, particularly the Mercury/Gemini/Apollo programs. Lots of good biographies about individual astronauts as well as more general books about various missions/programs.

Almost any period or country (kingdom, empire, whatever). Inevitably I learn something new.
